Flaxseed Banana Bread Recipe:

Ingredients:

  • 2 ripe bananas, mashed
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup ground flaxseed
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, honey or maple syrup, melted coconut oil or vegetable oil, eggs, and vanilla extract.
  3. In a separate bowl, whisk together the flour, ground flaxseed, baking soda, salt, and cinnamon.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-55 minutes, or until a toothpick inserted in the center of the bread comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
  8. Slice and serve the flaxseed banana bread as desired.
