Flaxseed Banana Bread Recipe:
Ingredients:
- 2 ripe bananas, mashed
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil or vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup ground flaxseed
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
Instructions:
- Preheat the oven to 350°F (180°C) and grease a 9×5 inch loaf pan.
- In a large mixing bowl, combine the mashed bananas, honey or maple syrup, melted coconut oil or vegetable oil, eggs, and vanilla extract.
- In a separate bowl, whisk together the flour, ground flaxseed, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-55 minutes, or until a toothpick inserted in the center of the bread comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
- Slice and serve the flaxseed banana bread as desired.
