How to Make a Herbal Infused Honey

Honey has it’s own medicinal healing properties, when infused with herbs it becomes so versatile to bring healing both internally and externally.

  1.  Select a small jar with a wide mouth and a tight-fitting lid, such as a canning jar.
  2. Place enough chopped herbs in the jar until it is half full.
  3. Add enough honey to the jar so that the herbs are completely covered.
  4. Stir to make sure the honey and herbs are mixed well.
  5. Top off with more honey to make sure the herbs are well covered.
  6. Cover tightly and place in a sunny windowsill or warm location for 4 weeks.  You may tip the jar upside-down occasionally if the herbs tend to rise to the top.  Alternatively, you can gently heat the honey and herbs in a double boiler for 3 hours.  Do not overheat as this will destroy the medicinal qualities of the honey.
  7. When ready, strain well with a cheesecloth, reserving the honey and composting the herbs.
  8. Store in a cool location.
