Honey has it’s own medicinal healing properties, when infused with herbs it becomes so versatile to bring healing both internally and externally.
- Select a small jar with a wide mouth and a tight-fitting lid, such as a canning jar.
- Place enough chopped herbs in the jar until it is half full.
- Add enough honey to the jar so that the herbs are completely covered.
- Stir to make sure the honey and herbs are mixed well.
- Top off with more honey to make sure the herbs are well covered.
- Cover tightly and place in a sunny windowsill or warm location for 4 weeks. You may tip the jar upside-down occasionally if the herbs tend to rise to the top. Alternatively, you can gently heat the honey and herbs in a double boiler for 3 hours. Do not overheat as this will destroy the medicinal qualities of the honey.
- When ready, strain well with a cheesecloth, reserving the honey and composting the herbs.
- Store in a cool location.
