Sun Tea is a wonderful way to enjoy a herbal tea in summer.  Use 1 teaspoon dried herb or 1 tablespoon fresh herb per 1 cup of water.

You can make two days’ worth of tea at once and keep the second day’s tea overnight in the fridge.  Never reheat tea, it will lose its medicinal qualities, rather drink it cold over ice the next day.

  1. Place the herb in a glass tea pot, in room temperature water. Cover with lid.
  2. Let the herb steep for approximately 20 minutes in the sun.
  3. Strain into a cup for sipping.

Lemon Balm is the perfect herb to make this tea!
