Lemongrass Chicken Skewers

Ingredients:

  • 1 lb chicken breast, cut into small cubes
  • 2 stalks of lemongrass, white part only, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions:

  1. In a bowl, mix together the chopped lemongrass, garlic, ginger, soy sauce, fish sauce, honey, lime juice, salt, and pepper.
  2. Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the chicken onto the skewers.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  6. Serve hot with your favourite dipping sauce.
