Lemongrass Chicken Skewers
Ingredients:
- 1 lb chicken breast, cut into small cubes
- 2 stalks of lemongrass, white part only, finely chopped
- 2 cloves of garlic, minced
- 1 tbsp ginger, minced
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp honey
- 1 tbsp lime juice
- Salt and pepper to taste
- Skewers (if using wooden skewers, soak them in water for at least 30 minutes)
Instructions:
- In a bowl, mix together the chopped lemongrass, garlic, ginger, soy sauce, fish sauce, honey, lime juice, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the chicken onto the skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Serve hot with your favourite dipping sauce.
